Spiced Quinoa & Berry Porridge

Ingredients

1C (170g) quinoa

2tsp oil (rice bran or canola)

2C (500ml) water

1 3/4C (375ml) milk of choice

1T pure maple syrup

1/2t ground cinnamon
Toppings

40 blueberries (fresh or frozen)

20 raspberries (fresh or frozen)

4T chopped nuts (optional)

1T pure maple syrup
Directions

Using a fine sieve rinse the quinoa under cold water for 1-2 minutes. Pour this into a medium size saucepan and dizzle the oil over the top. Mix this in gently and toast the quinoa over a medium heat for 2-3 minutes, or until all the water has evaporated. The smell is incredible!

Add the water to the pan and bring to a gentle boil. Cover with a lid and lower to a gentle heat. Cook the quinoa for around 15 minutes, unitl there is no excess water and the quinoa should look fluffy.

Now add the milk, syrup and cinnamon. Give it a gentle stir and let it cook through without a lid for around 5 minutes.

Some like to add the fruit here IF using frozen fruit, just to defrost but otherwise wait until plating.

Spoon quinoa into the bowls and top with fruit, chopped nuts and an extra dizzle of maple syrup.
***If making in advance just add a little extra milk before you reheat this in the microwave.
The cooked quinoa will last in the fridge for
3 days.
