Cauliflower Tabbouleh Salad

Serves: 4-6
Ingredients

1 medium cauliflower, grated

4 roma tomatoes, deseeded & diced

2 spring onions, chopped

80g parsley, finely chopped

20g mint, finely chopped

1/2t allspice
-
3T lemon juice ( about 1 lemon)

60 ml olive oil

1t salt

1 garlic clove, minced
Directions

Grate the cauliflower into a large bowl and add both the lemon and salt. Let this marinate for around 20 minutes. This will soften the cauliflower slightly.

Add the tomatoes, garlic, spring onion, herbs and allspice , give it a good stir.

Drizzle over the olive oil and combine this into the salad.

Serve immediately.
***If you are time poor you can now buy freshly grated cauliflower rice in most supermarkets. Don't use frozen.
***I also like to sprinkle my salad bowl with pomegranate seeds as it not only adds colour but the flavours that pop inside your mouth are incredible.
